Berry Mint Kiss Smoothie

This smoothie boasts big flavor, and cooling frozen yumminess. The mint adds a delightful burst of freshness.

Yields: 2 Servings

2 dates, pitted
½ cup baby spinach leaves
¼ cup mint, freshly chopped
¼ cup coconut milk (substitution: water)
1 cup raspberries

1.   Place the dates into the blender and pulse until they break down and form a paste.
2.   Next, add the spinach leaves, mint, and coconut milk. Puree until smooth.
3.   Last, add the raspberries and blend again.
4.   Pour into glasses over crushed ice to serve.
