Refreshing, summery cocktail with cucumber, basil and elderflower. Last summer, I ended up with a bumper crop of cucumbers and decided to infuse some Tito’s vodka with them (and a bit of basil). I also have an Aerogarden that provides a supply of fresh basil year round. I’ve been experimenting with different ways to use the cucumber vodka and this one is my favorite. I like to make it as cold as possible, so I keep the vodka in the freezer and I shake it until the shaker gets too cold for my hands!
10 basil leaves
1/2 oz simple syrup (made with agave nectar if possible)
1 lime, juiced
2 oz vodka
3 oz Cointreau or Triple Sec
Cucumber slices for garnish
TO MAKE THE CUCUMBER JUICE
Put slices of peeled cucumber in a juicer or add to a food processor or blender and process until smooth. Strain the juice through a sieve to remove any lumps before you use it in your drink.
TO MAKE THE MARTINI
Fill a cocktail shaker with ice. Add basil leaves, simple syrup, and lime juice and shake well. Add vodka, Cointreau and cucumber juice. Shake again and the strain into a martini glass. Garnish with a slice or two of cucumber before serving.
